But have you ever contemplated the idea of potato chip cookies? Even better, how about Peanut Butter Potato Chip Cookies? They’ve got to be good, really, I mean, peanut butter, potato chips, and a cookie—all in one treat! How could they miss?

PEANUT BUTTER POTATO CHIP COOKIES
1-1/4 cups butter or margarine, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
2-3/4 cups all-purpose flour
1 package (12 ounces) peanut butter chips
1 bag (7 ounces) rippled potato chips, coarsely crushed
In a large bowl, cream butter and sugars until fluffy. Add eggs and vanilla; beat until smooth. Add flour; stir until a soft dough forms. Stir in peanut butter chips and potato chips.
Drop tablespoonfuls of dough 1 inch apart onto a greased baking sheet. Bake at 350 degrees for 10 to 12 minutes or until edges are lightly browned. Transfer to a wire rack to cool.
Yield: about 8 dozen cookies
